Updated Hazelnut Latte Energy Balls
So I guess it is no secret that I LOVE energy balls!
Like seriously….I think I make one batch at least every week!
Now you may recognize this recipe, or you may not, as it is an “older recipe” that I have now updated. After making the old one a few times I decided a few of the ingredients seemed to be out of proportion and so I set back to the drawing board.
The new recipe is now lower in natural sugars, less maple syrup, and uses less coconut flour so that the mixture isn’t as crumbly. I also increased the amount of hazelnuts so that you get more of that hazelnut deliciousness which I ABSOLUTELY love!
Before we skip on to the recipe lets talk about why hazelnuts are so amazing!!!
Heart & Brain Health! Just like most “tree nuts” and seeds hazelnuts contain a lot of great healthy fats which the brain and the heart love! Healthy fats are used as energy by the brain and LDL cholesterol is a good cholesterol that helps to promote healthy hormones, improve blood lipids AND reduce inflammation.
Antioxidant Rich. These little nuts are chalked full of antioxidants (like vitamin E, vitamin C, manganese, polyphenols) which not only is anti-inflammatory and can improve heart health BUT can also reduce inflammation in joints, muscles and the digestive track! Eating a diet high in antioxidants can also improve the appearance of your skin, hair, nails and decrease sings of aging….Who doesn’t want that?
Local!! Over the last year I have really been trying to pay more attention to my food’s miles (meaning how far it has traveled BEFORE it gets to me). Making sure that the food miles are low not only makes sure that it is fresher when it makes it to me, which means I get the most out of the nutrients, BUT it also helps to reduce greenhouses gases that are produced in travel/storage. Most nuts are grown MILES away BUT hazelnuts and chestnuts are both grown here in the Pacific Northwest!
Now that you are in love with hazelnuts just as much as I am lets do this!
Hazelnut Latte Energy Balls
2/3 cup Hazelnuts, or 1/2 cup Hazelnut Pulp/Flour from making nut milk
1/4 cup Coconut Flour
1/4 cup Shredded Coconut (option to use an additional 1/4 cup for rolling the balls in after formed)
2 tbsp Fresh Ground Coffee Beans, or Espresso Beans
1/4 cup Maple Syrup
1/4 cup melted Ghee, or Coconut Oil for Vegan Option (I love adding Lee’s Provisions Maple Ghee, not only is it ORGANIC which is super important when it comes to animal products BUT it is also a local Canadian brand founded by a fellow Nutritionist!)
1 tsp Vanilla Powder OR 1 tbsp Pure Vanilla
Optional: 1/4 cup Collagen or Protein Powder (I love adding my Vanilla Hemp Protein from Manitoba Harvest into these because it blend’s right in perfectly and hemp is such a great COMPLETE protein source from plants, which is sooo much more sustainable than animal proteins!)
Add the hazelnuts into a food processor, or high speed blender, pulsing a few times until the hazelnuts have been broken into 1/4 of their original size.
Once hazelnuts have been processed add in coconut flour, shredded coconut, ground coffee, maple syrup, ghee, vanilla, and protein powder if using. Process until the mixture is dough like and easily sticks together.
Using a scoop, or spoon, portion out and form 12-14 (1.5-2 inch) balls and place in a glass container in the fridge for storage.
Optional step: BEFORE placing in fridge roll each ball either in a mix of ground hazelnuts/coffee OR shredded coconut!
These energy balls make great make ahead snacks and can easily be incorporated into a meal prep day!
They are best stored in a glass seal container in the fridge for up to 10 days BUT can easily be tossed into the freezer and stored for up to 3 months.
