Quick Summer Superfood Salmon Salad with Raspberry Poppyseed Dressing
Lately I have so been feeling the summer vibes! My patio garden is in full swing. Beach days are a thing. Going on hikes means taking extra extra hydration. Farmers markets are a go to hang out. And of course all the summer produce is popping up everywhere!!! I feel like I cannot go anywhere in Vancouver without seeing local berry stands!
AND I don’t know about you but I LOVE berries of all shapes, sizes, and types!
I have never really been too much into fruit EXCEPT for berries! Now don’t get me wrong I still eat the other fruits BUT I just don’t crave them the same way I crave berries. I literally sit around all year waiting for the moment berry season starts. I dream about putting fresh raspberries, blueberries, or blackberries on yogurt and smoothie bowls. I envision creating rustic Saskatoon berry galettes. I crave the tart flavours of a cranberry flowing through my puckered up mouth.
Plain and simple I LOVE berries!
Berries are also incredibly rich in antioxidants, fibre, and low glycemic which makes them a crazy amazing superfood AND perfect add into the diet to help combat health challenges such as;
Depression, Anxiety, BPD, and other mental health challenges
Basically…berries are AMAZING! And so I thought why not create something amazingly delicious and berry filled for you guys THAT’S NOT a baked good! Yes, I know, I know, baked goods are amazing, BUT everywhere you turn these days there is a berry filled muffin, loaf, cookie, pie and soooo much more! So I thought I would give you something slightly different BUT still equally as tasty….Enter my Summer Superfood Salmon Salad with a creamy dreamy Raspberry Poppyseed Dressing!
This salad has it all! It is crisp! It is bitter! It is sweet! It is savoury! It has spicy! And it has juiciness! So without further ado, your new salad of the summer…

Summer Superfood Salmon Salad with Raspberry Poppyseed Dressing
4 cups Butter Lettuce
2 cups Endive, or another bitter leafy green
1 medium Cucumber chopped
1 bunch Radishes, sliced thin
1 cup Strawberries, or other berries of choice
1/4 of a Red Onion chopped
1/2 cup Toasted Almonds
1 Avocado, diced
1 side of Sockeye Salmon
1 tsp Smoke Paprika
1/2 tsp Chilli Powder
Salt and Pepper to Taste
1/2 cup Raspberries
1 tbsp White Balsamic
1 tbsp Apple Cider Vinegar
4 tbsp Olive Oil
1 tsp Dijon
1 tbsp Poppyseed’s
Optional: 1 tsp Honey to sweeten
In a small bowl mix together paprika, chilli powder, salt and pepper and then spread over the flesh side of the salmon. Drizzle with olive oil and then place on a parchment lined roasting pan and then into the oven. Once salmon is in the oven turn on the oven to 425 and begin cooking. Once your oven has preheated set your timer for 11 minutes. When the timer goes off your salmon will be cooked perfectly!
Place all dressing ingredients in a high speed blender and combine. If you do not have a high speed blender you can also simply mash the raspberries and whisk everything together, the consistency just might be slightly chunkier.
Layer and split all salad ingredients between 4 bowls.
Place 2 tbsp’s of dressing on each portion before digging in and enjoying!
This salad is perfect for a night spent out on the patio with close friends and a glass of vino! It also is a perfect make ahead meal prep salad that will keep you satisfied for hours but not weigh you down.
