Cookies are life! Need I say anymore?!

Growing up whenever I would visit my grandma, which was almost daily becasue I come from a close knit family, I would head straight for her cookie jar to see exactly what deliciousness she had in there. I would reach in and be delighted in always finding exactly what I was wanting…Which most of the time it would be some variation on a chocolate chip cookie, becasue lets get real they are the best BECAUSE you can do sooo much with them!

Now my grandmas cookies were definitely made in the more traditional way…loaded with butter, brown sugar, and alllll the processed flour! Now I definitely do not like demonizing ANY foods, BUT I also do not want a ton of these things in my current foods, which is why I like to still feed my cookie habit (seriously its a habit) but also with a little more health conscious little balls of delight!

Lately I have also been obsessing over tahini, actually who am I kidding I am always obsessing over tahini, and so I thought to myself why not combine two of my favourite things…cookies and tahini into one?! I couldn’t think of a reason not to, so after much experimentation these Tahini Chip Cookies were born!

Now before we get to the recipe let me tell you a little about this second love of mine, Tahini!

For those of you unfamiliar with tahini, it is essentially a seed butter made from sesame seeds. Now, sesame seeds are quite the little wonders themselves as they have a higher healthy fat and protein content then almost any other seed/nut which makes them a great blood sugar balancer! But thats not all!! These little seeds are also super high in minerals that are normally harder for us to get like magnesium, copper, zinc and iron. All of this combined with the fact that sesame seeds are also high in fibre makes them a great addition to anyone’s diet, but especially if you suffer from mental challenges or hormonal imbalances.

I am sure that now you can see exactly why I am so tahini obsessed, and why it makes such a great edition to these cookies!

Tahini Chip Cookies

Ingredients:

1 cup Almond Flour

1 cup Oat Flour (or 1 1/4 cup Oats ground into flour)

1.5 tsp Cinnamon

1 tsp Baking Powder

3/4 tsp Baking Soda

1/8 tsp Salt

1/2 cup Tahini

1/4 cup Coconut Oil

1/3-1/2 cup Maple Syrup (I use 1/3 cup becasue I like my cookies more cinnamony and less sweet, BUT if you want a sweeter cookie I suggest using 1/2 cup)

1 tsp Pure Vanilla

1 tsp Apple Cider Vinegar

1/2 cup Dark Chocolate Chips

How To:

  1. Preheat your oven to 350 degrees and begin by placing the coconut oil in a small pot and melt over low on the stove. If you tahini is on the thicker side you can place it in the pot as well just make sure to stir it frequently and watch that it does not burn.

  2. Combine almond flour, oat flour, baking soda, baking powder, cinnamon and salt in a large mixing bowl.

  3. Once coconut oil and tahini are in a liquid state remove from the stove and add in maple syrup and vanilla. Stir to combine and then add into the mixing bowl with the dry ingredients.

  4. Add the apple cider vinegar to the mixing bowl mixing to combine together and setting aside to cool for about 5-7 minutes.

  5. Once batter has cooled completely you can then add in your chocolate chips and use a cookie scoop, or a spoon, to spoon about 1.5 tbsps of batter on to a cookie sheet lined with parchment paper and place in the oven for 13-15 minutes.

  6. Once edges begin to brown remove the cookies from the oven and let cool for about 5 minutes on the cookie sheet before moving to a cooling rack. Let cookies cool completely before placing in a sealed air tight container.
