An All Hallows Eve Treat For You
Trick or Treat? Out of the two I would definitely pick treat! Now it’s not that I don’t love getting into some double toil and trouble every now and then, it’s just that these treats are just way too delicious to ever say no to!!!
Now I don’t know about you but when I was a kid treat or treating I would go door to door filling my pillow case (Yes that right… I used a pillow case because lets be real the buckets just were not big enough) with all the high fructose corn syrupy treats i could carry, only to go home and binge on most of it over just a few days….or maybe a week tops! Talk about sugar over load!!! My stomach literally just turns thinking about it now…….
BUT even though thinking about the overdoes of sugar I used to have as a child makes me feel queazy I still definitely love to have treats every once and awhile! So now when I choose to have some sweet taste treats I am a little more conscious of a few things like the amount of sugar I am consuming, the type of sugar I am consuming, and what other ingredients are in my treat.
You see traditional North American sweet treats like candy and chocolate are full of some pretty nasty things like; high fructose corn syrup, white processed sugar, dairy, trans-fats, and refined cacao. All of which, if ingested for long periods of time and in daily quantities, can lead to; diabetes, cancer, insulin resistance, mood imbalance, mental health issues, hormonal issues, cardiovascular issues, asthma and weight gain……
BUT FEAR NOT!! I got you and your sweet tooth covered this Hallows Eve! These Salted Caramel Pumpkin Spice Cups will not only satisfy your sweet tooth BUT also have some more positive effects on your health. These cups are lower in sugar than your traditional treat, and use maple syrup/dates as a sweetener instead of processed white sugar which means that they will have less of a blood sugar spike and will not have as big of an impact on your mood. They are also full of healthy fats coming from coconut which can aid in hormone balance, mood balance, and over all brain/skin health. I also use a grassfed bovine gelatin in them to help make the carmel jelly and give you some of the extra benefits of added protein, and collagen! Raw cacao takes the place of refined and processed cacao so that you get the maximum health qualities of cacao like; mood boosting, antioxidants, magnesium, iron, and fibre which all help aid in fighting inflammation, skin health, brain health, mood balance, and hormonal balance!
But enough teasing…..
Salted Caramel Pumpkin Spice Cups
1/2 cup Coconut Butter
1/3 cup Coconut Oil
1/4 cup Maple Syrup
1/3 cup Raw Cacao
Corse Sea or Himalayan Salt
Pumpkin Filling Ingredients:
1 cup Dates pitted
1 cup warm Water
1 tsp Pumpkin Pie Spice
1 tbsp Pumpkin
2 tbsp Bovine Gelatin Powder
The How To:
In a small sauce pan over low melt the coconut butter, coconut oil, and maple syrup together being careful to NOT let the mixture burn or boil.
While the mixture is melting on the stove top place your pitted dates in a bowl with the warm water and let soak for 15 minutes.
Once your coconut oil, coconut butter and maple syrup is heated and combined together, turn off the heat and add the raw cocoa and whisk until the mixture is smooth with no lumps and set aside.
In a high speed blender place date water (but not the dates yet), gelatin, and pumpkin spice and blend on high for about 45 seconds. Once the mixture is frothy looking add in the dates and continue blending until dates are fully combined and the mixture is smooth. Empty into a small bowl.
Using either silicon cups or a muffin tin lined with liners, spoon in chocolate mixture until all the cups are 1/3 of the way full for the first layer of chocolate. Then spoon the caramel into each until 2/3 full, leaving the last third for the top chocolate layer.
Sprinkle the tops of each cup with a dash of salt and then place in the freezer to form for 2 hours.
Once completely formed remove from freezer and go to town!!!
**Note that all though these treats get formed in the freezer and cannot stand out for long periods of time without melting, they can easily be stored in the fridge after the initial forming stage.
Please note that all though this recipe does contain Bovine Gelatin it can easily be made vegan. To veganize this recipe simply leave out the gelatine and lessen the date water to 1/2 cup!
ALSO the chocolate recipe is a basic raw chocolate and can easily transfer over to many other tasty BUT healthy chocolate recipes!
